The Thakali people of the Mustang district in Nepal have served this meal for centuries — a complete spread laid on a single plate, each component chosen to nourish, balance, and honour the guest.
Think of it as a Himalayan thali — steamed rice, dal slow-cooked with ghee, two seasonal vegetable curries, fermented achar, papad, and sel roti. The flavours are clean, warming, and deeply satisfying. Familiar in spirit. Entirely new on the palate.
